Blueberry Pie - parte deux

So here are some things about making a blueberry pie. First, you should not get greedy and want too many blueberries in it. I always do this. I follow the recipe on the back of the "Minute Tapioca" box which calls for 4 cups of blueberries ... this never seems like quite enough. So I used about 5 and a half cups or so ... maybe 6. However many were in 2 pints of blueberries.

If you are going to be greedy and use too many blueberries because 4 cups doesn't seem like quite enough ... DO NOT tip the pie plate when you're pulling the aluminum foil off the bottom. At least don't tip the plate for very long. Because here is what will happen: the fruit will spill OUT. Into a puddle. In the pan which you have carefully lined with said aluminum foil so that you won't have to clean it (only now the aluminum foil is wadded up in your hand and the pan is full of a puddle of blueberry pie filling).

If you have done all of the above already ... be sure that 18 years before this, you married someone calm and steady like LightHusband who very calmly and steadily says to you, "No problem, I'll hold up one edge of the crust with a spatula and you can spoon the puddle back in. I know just the spatula ... it's that baby one hanging right there by your right hand."


So I remembered to breath ... and be kind to myself ... and followed his instructions. And one side of the pie looks a little funny, but it will still taste good.

LOL! Reminds me of the time I baked a pecan pie and forgot to take the paper liner out of the crust before baking it. (Yes, I was using store bought crust... I know, I'm a cheater.) Sam had to talk me down when I pulled the pie out an hour later and realized what I'd done -- and then he held the plate when I flipped the pie innards out of the crust, removed the paper and flipped it back in! Viola! That's one way to keep the crust from burning...

Oh ... trust me ... that is a store bought crust ... Pillsbury in the red box in the refrigerated section!! I don't make pie crusts ... just the innards.

I tend to do something like this almost everytime I cook, such as using too small of a bowl or using 2-times too much milk. My reaction is never very gracious, usually involving foot-stomping and tears, but Schuyler is also always very helpful and I'm learning to not get so upset.
This last Thanksgiving, we were at my mom's and she made a cheesecake, but forgot the sugar, so we were served cream cheese with forks, basically. She thought it was hilarious. Then, we went to Schuyler's mom's and she had made a pumpkin pie and forgotten the sugar. Weird, huh? Anyway, she thought that Thanksgiving was ruined, shed a few tears, and moped for awhile. Knowing that my reaction tends more towards my mother-in-laws and seeing that reaction play out really taught me a lesson. Anyway, this is a really long comment, but I wish I could have a piece of that blueberry pie.

Soooo ... I think I'm bringing pie to the picnic after the Labyrinth on Labor Day weekend. I can't promise blueberry ... but since we'll have just come back from Maine, maybe. But I won't dump this one out on the counter and push it back in ... and I'll try not to forget the sugar ... and I won't bake the paper in it ... but I'm sure I'll make some other dumb mistake that will make it taste just fine.
